Coconut Milk Spicy Shrimp
Serves 8 persons
Ingredients:
- 600g large prawns – trimmed and cleaned 
- 75g onions – sliced 
- 125g tamarind juice (asam juice) 
- 30g sugar 
- 250ml coconut milk 
- 75ml cooking oil 
- Salt to taste 
Pounded ingredients:
- 10g ginger 
- 10g garlic 
- 15g fresh turmeric 
- 30g red chilies – deseeded 
- 2 stalks lemongrass 
Garnish:
- Sliced red chili 
- Fresh coriander 
Instructions:
- Heat oil in a wok and sauté the pounded ingredients until fragrant. 
- Add the sliced onions and stir-fry until softened. Add the prawns and mix well, continuing to stir-fry for a few minutes. 
- Pour in the tamarind juice and coconut milk, then season with salt and sugar. 
- Stir-fry until the prawns are fully cooked. 
- Transfer to a serving dish and garnish with sliced chili and coriander. Serve hot.
