Coconut Milk Spicy Shrimp
Serves 8 persons
Ingredients:
600g large prawns – trimmed and cleaned
75g onions – sliced
125g tamarind juice (asam juice)
30g sugar
250ml coconut milk
75ml cooking oil
Salt to taste
Pounded ingredients:
10g ginger
10g garlic
15g fresh turmeric
30g red chilies – deseeded
2 stalks lemongrass
Garnish:
Sliced red chili
Fresh coriander
Instructions:
Heat oil in a wok and sauté the pounded ingredients until fragrant.
Add the sliced onions and stir-fry until softened. Add the prawns and mix well, continuing to stir-fry for a few minutes.
Pour in the tamarind juice and coconut milk, then season with salt and sugar.
Stir-fry until the prawns are fully cooked.
Transfer to a serving dish and garnish with sliced chili and coriander. Serve hot.
