Coconut Milk Spicy Shrimp

Serves 8 persons

Ingredients:

  • 600g large prawns – trimmed and cleaned

  • 75g onions – sliced

  • 125g tamarind juice (asam juice)

  • 30g sugar

  • 250ml coconut milk

  • 75ml cooking oil

  • Salt to taste

Pounded ingredients:

  • 10g ginger

  • 10g garlic

  • 15g fresh turmeric

  • 30g red chilies – deseeded

  • 2 stalks lemongrass

Garnish:

  • Sliced red chili

  • Fresh coriander

Instructions:

  1. Heat oil in a wok and sauté the pounded ingredients until fragrant.

  2. Add the sliced onions and stir-fry until softened. Add the prawns and mix well, continuing to stir-fry for a few minutes.

  3. Pour in the tamarind juice and coconut milk, then season with salt and sugar.

  4. Stir-fry until the prawns are fully cooked.

  5. Transfer to a serving dish and garnish with sliced chili and coriander. Serve hot.
