Sambal Okra

Serves 8 persons

Ingredients:

  • 300g okra – washed and sliced

  • 150g shrimp – shelled and deveined

  • 40g onion – sliced

  • 2 red chilies – deseeded and sliced

  • 15g tamarind pulp – mixed with 125ml water

  • 30g sugar

  • Salt to taste

  • 4 kaffir lime leaves – finely shredded

  • 125ml cooking oil

Pounded ingredients:

  • 40g shallots

  • 5g garlic

  • 10g fresh turmeric

  • 1 stalk lemongrass

  • 20g dried chilies – cut and soaked in water for 10 minutes

  • 10g shrimp paste (belacan)

Instructions:

  1. Heat the oil in a wok and sauté the pounded ingredients until fragrant.

  2. Add the sliced onions and chilies. Stir-fry for a few minutes, then add the shrimp, okra, and shredded kaffir lime leaves. Stir well to combine.
