Sambal Okra
Serves 8 persons
Ingredients:
300g okra – washed and sliced
150g shrimp – shelled and deveined
40g onion – sliced
2 red chilies – deseeded and sliced
15g tamarind pulp – mixed with 125ml water
30g sugar
Salt to taste
4 kaffir lime leaves – finely shredded
125ml cooking oil
Pounded ingredients:
40g shallots
5g garlic
10g fresh turmeric
1 stalk lemongrass
20g dried chilies – cut and soaked in water for 10 minutes
10g shrimp paste (belacan)
Instructions:
Heat the oil in a wok and sauté the pounded ingredients until fragrant.
Add the sliced onions and chilies. Stir-fry for a few minutes, then add the shrimp, okra, and shredded kaffir lime leaves. Stir well to combine.
