Sambal Okra
Serves 8 persons
Ingredients:
- 300g okra – washed and sliced 
- 150g shrimp – shelled and deveined 
- 40g onion – sliced 
- 2 red chilies – deseeded and sliced 
- 15g tamarind pulp – mixed with 125ml water 
- 30g sugar 
- Salt to taste 
- 4 kaffir lime leaves – finely shredded 
- 125ml cooking oil 
Pounded ingredients:
- 40g shallots 
- 5g garlic 
- 10g fresh turmeric 
- 1 stalk lemongrass 
- 20g dried chilies – cut and soaked in water for 10 minutes 
- 10g shrimp paste (belacan) 
Instructions:
- Heat the oil in a wok and sauté the pounded ingredients until fragrant. 
- Add the sliced onions and chilies. Stir-fry for a few minutes, then add the shrimp, okra, and shredded kaffir lime leaves. Stir well to combine.
